Homemade mashed potatoes were a great side dish with turkey dinner. Making more than needed, the large leftovers gave my mom and I the opportunity to be creative and try something new. That was, drumroll please... potato pancakes.
On the first attempt, my mom simply scooped some of the mashed potatoes into the oiled pan. This was a fail. They stayed mushy, not having the ingredients to form a cake. The potato mix absorbed the oil and fell apart.
I stepped in to help, researching how to make latkes from mashed potatoes. I found from a recipe on Google that adding egg and flour would do the job. These help keep the mashed potatoes together and create a crispy outside when frying them.
As you can probably tell from the picture, our latkes weren't beautiful, nor did they have the same crunch as boxed latke mix on Hanukah. This experiment was disappointing with little satisfaction. However, some apple sauce made the snack of 6 tricolor latkes complete.
